These cookies are great all year round (trust me, I make them once every other week) and all day long, but as it's December 19th and I feel obligated to show a little bit of holiday spirit, I must also note that they make an excellent addition to a holiday potluck party AND that they make the perfect gift for literally anyone. Wrap them up in a bit of butcher paper, tissue paper, or cloth, tie with something sparkly and you have an edible gift that will fit into everyone's lifestyle and (most) everyone's dietary needs. The light sweetness and hit of chocolate are enough to satisfy my sweet tooth while the oats and peanut butter keep my tummy feeling full and my energy up with no unnecessary baggage involved. No gluten, no sugar, no animal products and no soy. Just five ingredients, 25 minutes, and lots of yumminess! Enjoy ;)
5 Ingredient Healthy Chocolate Chip Cookies
Prep time: 10 minutes. Bake time: 15 minutes.
Ingredients for about 20 cookies:
- 2 cups rolled oats
- 2 ripe or overripe bananas
- 1/4 cup peanut butter
- 2 tbsp maple syrup
- 2 tbsp coconut oil
- 1/4 cup chocolate chips
- pinch of salt
- Preheat oven to 350* and line a pan with parchment paper or a silpat.
- Add all ingredients except for chocolate chips and salt to a large bowl and mash together with a fork until all banana chunks are gone and ingredients are incorporated uniformly.
- Add chocolate chips and mix together briefly.
- Scoop mixture out with a large spoon and shape roughly into a ball. Place dough ball on baking sheet and gently squish flat with the back of the spoon. Raw cookies should be about the same size as you would want them to be once they're cooked as this mixture does not spread out or rise.
- Sprinkle a pinch of salt on top of each cookie and bake for 15-20 minutes. Cookies should be golden brown on the underside and should not be gooey when poked in their centers when they are finished.
