Monday Mood - Beet It

Whew, I got through Monday. Life in New York has certainly been getting harder, and with a week-long trip to California coming up, I've been having a hard time focusing and scheduling. I have a few exciting things in the works for your reading/viewing pleasure, so I hope that I will be able to get it together this week! I do it all for you, friends ;)

Despite my lack of focus, I managed to be inspired by something very simple this weekend. Beets! Do you love them? Hate them? I don't think I was really into beets until about a year ago, when I learned just how delicious they are raw. My favorite smoothie recipe involves frozen beets and blueberries. When you drink that 3 times a week, you realize just how cleansing beets really are. They flush your liver and your bloodstream of toxins and yes, they do aid digestion. They are also delicious when made into a salsa or slaw. I am dying to experiment with beets as a DIY lip stain, too. Pinterest has also just revealed to me that beets are relatively easy to grow at home! So probably a lot of beets in our future, here.

Veggies for Dinner - Spring Beet Slaw


What did you all eat for dinner last week? Did you even notice that I totally left you hanging on this whole Veggies for Dinner thing? I'm sorry! I was caught up in the Fashion Revolution Day storm and had leftover tabbouleh for 3 out of 7 dinners...

But now I'm back! The sun is back, too, here in Brooklyn. Somehow, the temperature went straight from 50 to 75 degrees and that has me craving something cold and simple for dinner. So tonight, we are doing a raw slaw. No, of course this isn't the type of slaw with mayo in it! Who do you think I am? Spring Beet Slaw

Takes about 10 minutes.

Ingredients for about 2 servings:

  • 1 large beet
  • 2 small carrots
  • 1/2 bell pepper
  • 1/2 cucumber
  • 2 stalks green onion
  • 1/4 cup chopped mint leaves
  • 1/2 lime or lemon


  1. This is all about chopping, no cooking involved, woohoo! Try to chop everything into similar sizes, I did mine in matchsticks. You could do yours in small diced chunks or if you want to get fancy here, take these veggies to a mandolin. 
  2. Pro tip: be sure to peel your beets! The skin is not tasty.
  3. After you've chopped everything and tossed all those veggies into the party bowl, squeeze some lime/lemon juice over the top. 

But Faye, this isn't a full meal! Ok, ok, I ate this on top of a bed of quinoa and chickpeas for good protein and nutrition. I fully enjoy eating a big bowl of raw veggies (it makes me feel so alive!) but I realize that whole grains and other non-leafed foods are important for the body. So here are some more tips on how to eat this raw slaw:

  • You can do like me and eat this on top of a bed of whole grains.
  • Or, slap some slaw on top of your veggie burger, yum!
  • Maybe try rolling this up in a pita with some hummus and lettuce for a lunchtime wrap.
  • Perhaps this would be delicious tossed into a leafy salad and served with some seared tofu and sauteed greens. Though, I'm more of a one-bowl dinner kind of gal...

Don't be afraid to get creative with this one. It tastes great with lots of other veggies added or substituted. I love to add green apple to this slaw for a sweeter taste. If you need some more volume you can go with the traditional red cabbage and broccoli shreds, too. Have fun with the veggies you have on hand!
