What did you all eat for dinner last week? Did you even notice that I totally left you hanging on this whole Veggies for Dinner thing? I'm sorry! I was caught up in the Fashion Revolution Day storm and had leftover tabbouleh for 3 out of 7 dinners...
But now I'm back! The sun is back, too, here in Brooklyn. Somehow, the temperature went straight from 50 to 75 degrees and that has me craving something cold and simple for dinner. So tonight, we are doing a raw slaw. No, of course this isn't the type of slaw with mayo in it! Who do you think I am? Keep reading if you want to discover my slaw secrets....and enjoy your Wednesday night Veggies for Dinner!
Spring Beet Slaw
Takes about 10 minutes.
Ingredients for about 2 servings:
- 1 large beet
- 2 small carrots
- 1/2 bell pepper
- 1/2 cucumber
- 2 stalks green onion
- 1/4 cup chopped mint leaves
- 1/2 lime or lemon
- This is all about chopping, no cooking involved, woohoo! Try to chop everything into similar sizes, I did mine in matchsticks. You could do yours in small diced chunks or if you want to get fancy here, take these veggies to a mandolin.
- Pro tip: be sure to peel your beets! The skin is not tasty.
- After you've chopped everything and tossed all those veggies into the party bowl, squeeze some lime/lemon juice over the top.
But Faye, this isn't a full meal! Ok, ok, I ate this on top of a bed of quinoa and chickpeas for good protein and nutrition. I fully enjoy eating a big bowl of raw veggies (it makes me feel so alive!) but I realize that whole grains and other non-leafed foods are important for the body. So here are some more tips on how to eat this raw slaw:
- You can do like me and eat this on top of a bed of whole grains.
- Or, slap some slaw on top of your veggie burger, yum!
- Maybe try rolling this up in a pita with some hummus and lettuce for a lunchtime wrap.
- Perhaps this would be delicious tossed into a leafy salad and served with some seared tofu and sauteed greens. Though, I'm more of a one-bowl dinner kind of gal...
Don't be afraid to get creative with this one. It tastes great with lots of other veggies added or substituted. I love to add green apple to this slaw for a sweeter taste. If you need some more volume you can go with the traditional red cabbage and broccoli shreds, too. Have fun with the veggies you have on hand!
